The May Special is a Green Tea Sourdough, once again using the friction-milled Zentrofan flour.  The taste is subtle rather than strong – it’s more about the health benefits.

This month it’s the Battle of the Pies again: India vs South Africa in a comfort food showdown.

And rounding off Autumn, our Seasonal Quiche is inspired by Dish Magazine: Goat’s Cheese, Sticky Walnut & Caramelised Onion.

The May Special

Green Tea is widely known for its health benefits:  high in antioxidants with properties to support blood sugar control, boost your metabolism and improve gut health.  This makes it a perfect ingredient in our sourdough, which unlike processed bread, has similar benefits.

Zentrofan flour is finer, lighter and healthier through a milling process that uses cool air currents rather than rolling or grinding the grains.  Avoiding heat and excessive friction helps retain the nutrients in a whole grain flour which is simultaneously light and fine in texture.

Seasonal Quiche

Goat’s Cheese, Sticky Walnut & Caramelised Onion

May’s Seasonal Quiche is inspired by a recipe by Dish magazines food editor, Claire Aldous.  The flavour profile of Goat’s Cheese, sticky sugared walnuts and red onion reduced in balsamic vinegar is always a winning combination.

Chicken a la King vs the Sharma Masala

It’s that time again:  the head chef’s away, so the sous-chefs have come out to play.

In the South African corner Connor has made us Chicken a la King:  a South African family favourite with rosemary & garlic in a creamy, mushroom sauce.

And for the vegetarians, we have the Sharma Masala:  potato, leek, artichoke & spinach in a creamy sauce flavoured with cumin and masala spices.
